Rather than a recreation of the traditional Jing Ba Jian, these are eight flavors that have remained with me after years of making, refining, and reimaging them in Seattle.
They carry memories of Beijing,
of migration and belonging,
of how time changes a person,
and of the things that, in the end, stay with us.
I never set out to preserve Beijing.
I simply couldn’t bear to forget it.

它们承载着关于北京的记忆，
关于迁徙与归属，
关于时间如何改变一个人，
也关于那些最终留在心里的东西。
